Holiday Cookie & Cocktail Recipes



It's the holidays and between the gift giving, family obligations and festive decorations that need to come down from our attic, who has time to party plan? That's why the food and beverage team at Omni Amelia Island Resort have taken all the guess work out of wowing your guests at your next holiday event with these festive cookie and cocktail recipes. Featured in Edible Northeast Magazine, these delicious treats are sure to please any crowd.


Raspberry Thumbprint Cookies & Apple Hot Toddy

Raspberry Thumbprint Cookies

What You'll Need: How to Bake:

- 1 Stick of soft butter - Preheat oven at 350 degrees

- 1/2 Cup light brown sugar - Bake for 6-10 minutes

- 2 Eggs - Once out of oven, press center down

- 1 Teaspoon Vanilla Extract with thumb and fill with raspberry jam

- 1 Teaspoon Cinnamon

- 2 Cups of all purpose flour

- 1/8 Teaspoon of salt

- 4oz Raspberry jam

Apple Hot Toddy

What You'll Need: How to Create:

- 1/5 oz Maker's Mark Bourbon - Add apple cider and hot water in a

- 2 oz Apple Cider steam pitcher to heat

- 1 oz Honey - Pour into a glass coffee mug over

- 2 oz Hot Water honey and bourbon

- Garnish with a cinnamon stick



Sea Salt Triple Chocolate Butterscotch Cookies

What You'll Need:

- 5 oz unsweetened chocolate

- 1 cup milk chocolate chips

- 1 cup butter

- 5 eggs

- 2 cups sugar

- 3 teaspoons vanilla extract

- 1-1/8 teaspoons coffee extract

- 1-1/2 cups all-purpose flour

Rosemary Pear Martini

What You'll Need:

- 1.5 oz Spiced Pear liqueur ( St. George)

- .5 oz elderflower Liquor

- .75 oz. Rosemary Simple Syrup


How to Create:

- Combine all ingrates with ice and Shake.

- Strain into a martini glass and garnish with a sprig of rosemary



Rosettes

What You'll Need:

- 2 each Eggs, beaten

- 1 Tbsp Sugar, granulated

- 1 cup Flour, all purpose

- 1 cup Milk

- 1 tsp. Vanilla Extract

- ¼ tsp. Salt

- As Needed Oil, canola for frying

- As Needed Sugar, powdered


How to Create:

- Mix all ingredients and reserve.

- Warm enough canola oil to cover the bottom of the pan to 375 degrees.

- Dip the rosette iron into the oil and hold for 10 seconds.

- Remove and dab dry.

- Move rosette maker into reserved batter and then into the oil holding for 5 seconds

- Once golden brown, flip the rosette and brown the other side.

- Remove from the oil and place on paper napkin to drain.

- Once drained, sprinkle with generous amounts of powdered sugar as desired.

- Repeat process until batter is all used.

Cranberry Moscow Mule ( Yule mule)

What You'll Need:

- 1.5oz. Vodka ( ketal one or titos works best)

- .5oz Lime juice

- 1.5oz.Cranberry juice

- 2oz Ginger beer

- .75 oz Rosemary simple Syrup


How to Create:

- Add simple, lime juice, cranberry juice and vodka, into an ice filled Mule mug, top with ginger beer

- Float 3-4 fresh cranberries for a garnish.



Maple Bourbon Sugar Cookies

What You'll Need:

- Sugar 1 cup

- Butter ¾ cup

- Honey 2 ½ tsp

- Vanilla 1 tsp

- Cake Flour ¾ cup

- Bread Flour ¼ cup

- Salt 1 tsp

- Baking Soda 1 tsp

- White Chocolate Chopped ¾ cup

- Maple Bourbon Compound 4 ½ tsp – (bourbon reduction that is sweetened with maple syrup)

Cranberry Old fashioned

What You'll Need:

- 1 orange wedge

- .5 oz Simple syrup

- Dash of bitters

- 2 barspoons of whole cranberry sauce

- 2 oz Makers Marks Bourbon (or the guest choice)

- 2oz club soda


How to Create:

- Muddle Orange, bitters, simple, and cranberry sauce in a glass.

- Add ice and top with bourbon and soda
