Omni Amelia Island Resort is known for it's unique culinary concepts! Recently, we teamed up with PRI Productions to host the BAM event at Fort Clinch State Park. Playing on the Fort's history, we featured Civil War reenactors, a cigar-roller, a musical trio, firing of the cannons and a fireworks show.

Led by then Executive Chef (now Food and Beverage Director) Daven Wardynski, Omni Amelia Island’s culinary team was beyond excited to utilize the historical space. Operating out of Fort Clinch’s own kitchen, they were able to cook on-site, using the same primitive cast iron cookware that was available to the Civil War soldiers of the day. It was an opportunity for Chef Wardynski and his team to step out of their comfort zone and to provide a truly unique culinary experience to all guests in attendance.

“We were inspired by the original brick ovens, rustic cast iron and open wood fires of the time,” said Wardynski. “Our team was committed to showcasing the foods that the soldiers would have eaten. It was great to step back and embrace that raw feeling of real cooking.”

Menu items included a 12-hour Beef Roast, Peasant Flour Soup, local Whiting and made-to-order cast iron doughnuts.

State Park Rangers were also at the event, providing educational tours to the attendees who mixed and mingled and explored freely. Following dinner, guests were treated to an elaborate fireworks show and firing of the cannons. Omni Amelia Island Resort was proud to take part in the event and for the opportunity to showcase one of Amelia Island’s treasured gems.
